In China, the New Year's Eve dinner is the highlight in the celebration, filled with the anticipation over the entire year. The New Year's Eve feasts vary traditionally between north and south China: In the North, dumplings are the absolute star! Resembling boat-shaped ingots, they often have coins hidden inside, symbolizing wealth and prosperity. In the South, rice cakes and whole fish are essential, symbolic of "leading a better life" and "having a good start and a good finish to the whole year". Despite the differences in customs between the North and the South, these feasts are imbued with everyone's eager hopes and best wishes for a happy and prosperous new year.
